Why does the viscosity of hydroxyethyl cellulose decrease?

Hydroxyethyl cellulose (HEC) is a commonly used water-soluble polymer compound with good thickening and gelling properties. However, sometimes we find that the viscosity of hydroxyethyl cellulose decreases during use, which brings us some troubles.
